After boiling,the wort is filtered and cooled as quickly as possible, usually by putting it in a bath of cold water. The quicker this is done, the less the chance of infection.

Stir it to get plenty of air in (I'll tell you why in a moment).

Sprnkle on the yeast, put on the lid, and leave for a few days.
