Note: it is always difficult to judge quantities with this
salad: what is a large carrot, or a large orange for
that matter? Hence best use the picture above as your
reference: that's what the salad is meant to look like; mostly
carrot, a little orange.
Ingredients
4 large carrots, peeled and coarsely grated
1 large or 2 small oranges
1 tbsp olive oil
1.5 tbsp fresh mint finely chopped, or 1 tbsp frozen
chopped
1/8 tsp ground cinnamon
1/4 tsp black pepper
large pinch of salt
Method
Top and tail the oranges, slice the rest of the peel off,
then cut them in half, remove the pithy bit from the centre,
slice them thickly and cut the slices into 1 cm chunks.
Add the grated carrot, along with any juice that came out
of the oranges while you were chopping them.
Add the mint; if using frozen, don’t add too much as it can
be rather strong.
Add the rest of the ingredients and stir thoroughly.
