Cheap Dinner Number One

Costs considerably less than £10 (when shopping at Aldi).

Ingredients

For four people:
  • 1 kg new potatoes, peeled and cut into slices about ½ cm thick
  • 8 rashers of bacon, sliced into thin strips
  • 2 medium onions, finely chopped
  • 2 cloves of garlic, crushed or finely chopped
  • 40 gm butter
  • 1 tbsp olive oil
  • 8 eggs
  • salt and freshly ground black pepper
  • grated nutmeg (optional)
  • grated Cheddar cheese (optional)
  • cayenne pepper (optional)
For one person:
  • 0.25 kg new potatoes, peeled and cut into slices about ½ cm thick
  • 2 rashers of bacon, sliced into thin strips
  • half a medium onion or one smallish one, finely chopped
  • 1 small clove of garlic, crushed or finely chopped
  • 20 gm butter
  • 1 tsp olive oil
  • 2 eggs
  • salt and freshly ground black pepper
  • grated nutmeg (optional)
  • grated Cheddar cheese (optional)
  • cayenne pepper (optional)

Method

  1. Pre-heat the oven to 200 C.
  2. Melt the butter with the oil in a large frying pan over a medium heat.
  3. When it is hot, add the chopped onions; cook them until they begin to soften and turn translucent.
  4. Add the garlic and bacon; cook for a few minutes.
  5. Add the potatoes then sprinkle with a little salt and quite a lot of freshly ground black pepper.
  6. Optionally, sprinkle on some grated nutmeg.
  7. Stir well to ensure everything is mixed, then tip the lot into a greased oven dish; spread into an even layer in the dish.
  8. Cook for 40 minutes or until the potatoes are soft and a bit browned.
  9. Remove from the oven and turn the oven up to 220 C.
  10. Optionally, sprinkle on some grated Cheddar cheese (could add it here, or on top of the eggs in the next step, or both).
  11. Carefully crack the eggs over the potato mixture; try to keep the yolks evenly spaced across the dish.
  12. Sprinkle a little salt and freshly ground black pepper over the eggs.
  13. Optionally, sprinkle a large pinch of cayenne pepper evenly over the top.
  14. Return the dish to the oven and cook for a further 10 minutes or until the whites are cooked but the yolks still look a bit runny.
  15. Serve with a vegetable of your choice, ideally a green one.
