Chicken Pintxo With Chimichurri Sauce

Serves: enough for 4 people (2 skewers each).

Note: requires overnight marinating and bamboo skewers.

Method

For the Chimichurri Sauce:

  1. Mix all the ingredients together in a jug.
  2. Cover and leave to sit overnight in the fridge.

For the Chicken Pintxo:

  1. Cut the chicken into 3 cm cubes and place in a bowl.
  2. Mix all the other ingredients together in a small bowl.
  3. Pour the these ingredients onto the chicken pieces and mix until thoroughly coated.
  4. Cover and leave to marinate overnight in the fridge.
  5. Push the meat onto 8 skewers.
  6. Grill for 15 to 20 minutes, until cooked through.
  7. Serve with the jug of Chimichurri Sauce on the side.
