Curried Vegetable Florets


Serves 4.

Note: doesn't freeze well, the cooked veg goes mushy.



  1. In a frying pan that has a lid, cook the onion, garlic and chilli flakes in olive oil until the onion is soft.
  2. Stir in the sultanas, cumin, turmeric and salt.
  3. Stir the florets into the mixture.
  4. With the saucepan lid to hand, add the water, immediately put on the lid, turn the heat down and leave to steam for 10 minutes.
  5. Stir in the mango chutney and serve immediately.
