Kerry's Crumble Cake

Crumble cake,
        plum version

Serves 6.


For the base:

For the crumble topping:


  1. Pre-heat the oven to 180 C.
  2. Line a (~30 x 18 x 3 cm) baking tin with greaseproof paper.
  3. In a large bowl rub together the crumble ingredients until they resemble breadcrumbs.
  4. In another bowl, beat the butter and sugar until light and fluffy, then mix in the eggs.
  5. Fold into this the flour, baking powder and ground almonds.
  6. Spoon the mixture into the lined tin and arrange the fruit on top, cut sides up.
  7. Sprinkle on the crumble topping.
  8. Bake for 30 to 45 minutes, until the top starts to go brown.
  9. Serve hot or cold with custard or pouring cream.
