Kerry's Crumble Cake

Serves 6.
Ingredients
For the base:
- 120 gm butter
- 160 gm caster sugar
- 2 eggs
- 100 gm plain flour
- 1 tsp baking powder
- 70 gm ground almonds
- 500 gm chopped plums or halved/stoned cherries,
For the crumble topping:
- 50 gm ground almonds
- 70 gm plain flour
- 70 gm caster sugar
- 50 gm butter
Method
- Pre-heat the oven to 180 C.
- Line a (~30 x 18 x 3 cm) baking tin with greaseproof paper.
- In a large bowl rub together the crumble ingredients
until they resemble breadcrumbs.
- In another bowl, beat the butter and sugar until
light and fluffy, then mix in the eggs.
- Fold into this the flour, baking powder and ground almonds.
- Spoon the mixture into the lined tin and arrange the
fruit on top, cut sides up.
- Sprinkle on the crumble topping.
- Bake for 30 to 45 minutes, until the top starts to go
brown.
- Serve hot or cold with custard or pouring cream.
