Lemon Water Ice

Serves 6.

Requires a freezer.



  1. Combine the juice and rind.
  2. Boil the water and sugar together for 5 minutes to create a syrup.
  3. Allow the syrup to cool.
  4. Stir the syrup into the lemon juce and rind.
  5. Freeze in a shallow tray, stirring roughly every 20 minutes to prevent the bits separating out.
  6. Transfer to the fridge an hour before serving.
