Patatas Bravas

Makes: enough for 4 people as a side dish or as a component of tapas. If re-heating make sure to cover the dish to avoid it drying out.



  1. Pre-heat the oven to 180 C.
  2. Heat some oil in a pan and fry the onion for 5 minutes.
  3. Add the garlic, tomato, tomato purée, paprika, chilli, salt and sugar.
  4. Bring to the boil and simmer for 10 minutes.
  5. Put the potatoes into a roasting tin, add some olive oil and a sprinkling of salt then mix the lot together.
  6. Roast the potatoes in the oven for 60 minutes, turning two or three times during cooking, until crisp and golden.
  7. When the potatoes are done, add the sauce and mix well before serving.
