Roast Quail

Note: a tapas-style dish as these are very small birds; one person could easily eat the lot.
Note: the rub can be used with any bird, just scale up.



  1. Pre-heat the oven to 260 C.
  2. Mix the paprika, pepper and salt together on a small plate.
  3. Dip the back of each quail in the mixture and then use your fingers to spread it around the bird, adding the rest of the mixture to do the legs and fill any gaps.
  4. Place the quail in a shallow baking tray and roast for 15 minutes.
